Simple Seafood Chowder
After a trip out to the East Coast, I fell in love with seafood chowder. I was surprised at how tasty they could be without heapings of cream.
1 medium onion, chopped
1 tbsp olive oil
3 celery stalks, chopped
3 carrots, peeled and chopped
2 small potatoes, peeled and diced
6 cups vegetable stock
Salt and pepper
3 cups fresh/frozen scallops, cod, shrimp, clams
1. Heat olive oil in a large soup pot over medium heat.
2. Saute onion, celery, and carrots for 5 to 10 minutes until onion is translucent.
3. Add chopped potatoes and stock. Bring the stock to a boil.
4. Add seafood and cook for 5 minutes, checking to see that it is cooked through. Don’t overcook it!
