Roasted fennel with chili flakes
A perfect pairing for fish.
• 1 medium fennel, fronds and stem removed
• 2 tablespoons olive oil
• 2 teaspoons chili flakes
• salt and pepper
1. Preheat oven to 400 degrees.
2. Cut fennel into quarters, place on baking sheet.
3. Toss with olive oil, chili flakes, salt and pepper.
4. Roast for 30 minutes.
5. Serve one quarter of the roasted fennel per person.
