Lean Mean Meatballs
Meatballs – cooked and then flash frozen – are a perfect last minute meal that doesn’t come from a package. On a Sunday afternoon, make a batch and freeze them for lunches and easy dinners.
- 1 pound ground beef/pork
- 1 onion, peeled and chopped finely
- 1 garlic clove, minced
- 1 egg
- 2 tbsp each – ground flaxseeds and parmesan
- salt and pepper
1. Preheat oven to 400.
2. Combine the ground beef, onion, garlic, parmesan, breadcrumbs, and salt and pepper in a large bowl. You can add hot peppers if you like them spicy.
3. Form into balls and brown the meatballs in a pan for a few minutes. Transfer to a cookie sheet or into an oven dish, covered with tomato sauce and cook for 20 minutes.
