Cod with Olives and Capers

Cod is cheap and easy – neither refined nor finicky, both of which put it at the top of my list. This one is a mess-less meal – laid out on a sheet of foil, garnished, wrapped, and baked for 20 minutes.


  • 12 oz -thick piece of cod
  • 1 tbsp olive oil
  • 2 tbsp capers
  • 1/4 onion, thinly sliced
  • 6 black olives, halved
  • salt and pepper


1. Preheat oven to 400. Lay out a large piece of foil, place fish on top and garnish with remaining ingredients.

2. Bake for 17-20 minutes, until cooked through and tender.

3. Serve with green beans and broccolini.
