Simple Seared Scallops

People often worry that scallops are high in cholesterol. Fear not. Cholesterol is directly related to calories and saturated fat – both of which are low in scallops. Three medium scallops are less than 200 calories and offer up 20 grams of protein.

Ingredients:

  • 1 tbsp olive oil
  • 6 medium-size scallops
  • sea salt and pepper
  • squeeze of fresh lemon

Directions
1. Heat olive oil in a hot pan, on medium-high heat.

2. Sear scallops about three minutes pre side.

3. Serve with broccolini or rapini sautéed in olive oil with lemon and garlic. Serves two.
